The humble pumpkin is one of the most underrated vegetables. If you live in a temperate climate, they are extremely easy to grow and require almost no maintenance. Dig a shallow hole in Spring or Summer, place some pumpkin seeds in and water every other day for the first week. As long as there is no drought, you will be rewarded with a potential Jack-O-Lantern (or at least good eating) in a few months.
Pumpkin flower are edible and delicious too! One of the classic quesadillas is the quesdadilla de flor de calabaza. Here's the recipe:
- one tortilla
- add a handful of Oaxaca cheese (mozzarella can work in a pinch). The cheese should be pulled apart
- one large or two small pumpkin flowers, washed and dried
- Heat up a griddle until it's hot. Put a tortilla on the griddle until it's hot to touch. When the tortilla becomes a bit flexible, add all the cheese to one side.
- Fold the side that doesn't have cheese over it
- Flip it once. When the cheese is thoroughly melted, the quesadilla is ready!
- Serve with the salsa of your choice!
