I always loved to eat, and I discovered LCHF via Zooko (although he's a carnivore guy, a step further :)). At first, I thought it was not making any sense, as I was convinced by the "eat a bit of everything" and food pyramid narative. I tried out of curiosity, and it worked. I lose weight, I felt better (blood pressure going down, more energy, less cravings,...). It's now been more than five years I eat this way. Quickly after srtaing, I read about seed oils / omega 6 inflammatory effect. It made sense with some books I was reading at the time (Taleb) that was saying: if your ancestors were eating it for many years, it is probably OK to eat. Seed oils weren't part of that category.
I'm low carb high fat, not Zero carbs... I do love meat, but I'd find it too boring to only eat meat. Therefore, you'll find some carbs here below, but that should still fall under the LCHF rules.

Let's do some cooking!

Beef stew:

I like stews. they have a lot of rich flavours and it is difficult to miss one. It's is a cheap dish to do as it is usually make of tough meat cuts, which are usually the cheapest. One key ingredient in all stews and similar dishes is to use bones. In this case, I used some beef ribs, some veggies left in the fridge, a can of tomatoes, and half a bottle of red wine (the cheapest will do).

Ingredients:

Onions and/or leeks.
Garlic
Carrots
Celery
two cans of tomatoes
Half a bottle of red wine
Beef meat, in this case beef ribs. Any cheap cut cut in dices will do. The fatier the better.
Beef bones. Ideally with bone marrow.
Good and tasty fat: Ghee, beef tallow.
Spices: "herbes de provence", or thyme + rosemary + laurel.
A pressure pot. It's not compulsory, but makes things go faster.

Directions:

Chop the veggies and fry them in ghee or beef tallow. When it starts to color, add the tomatoes,

then the meat.

The whole has to be on medium high heat. I usually add salt at this step. Add the red wine and let the alcohol boil out. Add the rest of the spices.

Cover up and let it cook at low to medium heat for min 1h pressurized. If no pressure cook, put it covered in the oven for 5hour-6 s at 120 degrees C
